Easy Roast Chicken Dinner



  • 1 whole organic free-range chicken
  • 6-8 red skin potatoes (washed and quartered)
  • 1 tbsp softened butter
  • 1 tbsp olive oil
  • 2 sprigs fresh rosemary (chopped)
  • Salt and pepper
  • 1 lemon (quartered)


  • Preheat your oven to 450°
  • Place the potatoes in a baking dish
  • Mix the butter, olive oil, rosemary, salt and pepper together in a bowl
  • Stick the lemon quarters inside the cavity of the chicken
  • Rub the herb butter all over the outside of the chicken (and also under the skin as well if your moves are really advanced!)
  • Place the chicken on top of the potatoes
  • Bake for 1 hour and 15 minutes

    maybe we’ll try this while we are away! Looks so easy to do and they even have Whole Foods here so organic will be easy to find.
